Black Garlic Ramen W/ Short Ribs Recipe

Ingredients


For the Short Ribs

  • 3–4 lbs beef short ribs

  • 2 tbsp umami seasoning

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and black pepper, to taste

  • 5 cloves garlic, minced

  • 2 tbsp fresh ginger, grated

  • 1½ cups beef broth

For the Ramen

  • 4 packages fresh or dried ramen noodles (discard seasoning packets)

  • 4–6 cups beef broth (additional)

  • 2 tbsp soy sauce

  • 1 tbsp Worcestershire sauce

  • 1 tsp sesame oil (optional)

Toppings (Optional but Recommended)

  • Soft-boiled eggs

  • Sliced green onions

  • Baby bok choy or spinach

  • Mushrooms

  • Corn

  • Sesame seeds

  • Nori sheets

  • Chili crisp or sriracha

Instructions

  1. Season the Beef

    • Pat the short ribs dry.

    • Season generously with the umami seasoning, garlic powder, onion powder, salt, and pepper.

  2. Slow Cook

    • Place the short ribs in the crockpot.

    • Add the minced garlic, grated ginger, and 1½ cups beef broth.

    • Cover and cook:

      • Low: 7–8 hours

      • High: 4–5 hours

    • The meat should be fork-tender and easily pull away from the bone.

  3. Prepare the Broth

    • Remove the short ribs and skim excess fat from the cooking liquid if desired.

    • Pour the cooking juices into a large pot.

    • Add the additional beef broth, soy sauce, Worcestershire sauce, and sesame oil. Simmer for 10 minutes.

    • Taste and adjust seasoning with more soy sauce or umami seasoning if needed.

  4. Cook the Noodles

    • Cook the ramen noodles according to package directions.

    • Drain well.

  5. Assemble

    • Divide noodles among bowls.

    • Top with the tender short ribs.

    • Ladle the hot broth over the noodles.

    • Add your favorite toppings like soft-boiled eggs, bok choy, mushrooms, green onions, sesame seeds, and nori.

Tips

  • Searing the short ribs before slow cooking adds even more depth of flavor, but it's optional.

  • For a richer broth, stir in 1 tablespoon of butter just before serving.

  • A splash of rice vinegar or fresh lime juice brightens the finished bowl.

  • Leftover short ribs make an even more flavorful ramen the next day.
