Homemade Roasted Tomato Soup Recipe w/ Steak & Cheese

This homemade roasted tomato soup is rich, creamy, and full of fresh flavor, paired perfectly with a warm and cheesy steak and cheese sandwich. It’s the ultimate comforting meal for a cozy night in the kitchen!
Ingredients:
2 lbs ripe tomatoes (Roma or vine tomatoes work best)
* 1 medium onion, roughly chopped
* 4–5 garlic cloves, peeled
* 2 tbsp olive oil
* 1 tsp fresh thyme (or ½ tsp dried)
* 1 tsp dried basil (or a few fresh leaves)
* 2 cups chicken stock
* ½ cup heavy cream
* Salt & black pepper to taste
Instructions:
1. Roast the Veggies:
Preheat your oven to 400°F (200°C). Place the tomatoes (halved), onion, and garlic on a baking sheet. Drizzle with olive oil, sprinkle with thyme, basil, salt, and pepper. Roast for about 25–30 minutes, until the tomatoes are blistered and fragrant.
2. Blend It Up:
Transfer the roasted mixture to a blender (or use an immersion blender). Add the chicken stock and blend until smooth.
3. Simmer & Cream:
Pour the blended soup into a pot over medium heat. Stir in the heavy cream and let it simmer for about 10 minutes, adjusting the seasoning as needed.
4. Serve & Enjoy:
Ladle into bowls and garnish with a drizzle of cream, a sprinkle of basil, or a few croutons for texture.
