Serves: 2–3 Prep time: 10 minutes Cook time: 20 minutes
Ingredients
2 packs ramen noodles (discard seasoning packets)
4 cups chicken broth
1–2 cups cooked shredded chicken (or diced raw chicken breast/thigh)
2–3 tablespoons curry sauce (Japanese, Indian, or Thai-style curry sauce all work—adjust to taste)
1 teaspoon ground turmeric
1 tablespoon fresh grated ginger
2 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon sesame oil (or neutral cooking oil)
½ teaspoon black pepper
Salt to taste
Optional additions
1 cup mushrooms, sliced
1–2 cups spinach or bok choy
1 carrot, julienned
Corn kernels
Soft-boiled eggs
Green onions, sliced
Chili oil or sriracha
Lime wedges
Instructions
Build the broth
Heat the sesame oil in a medium pot over medium heat.
Sauté the ginger and garlic for about 1 minute until fragrant.
Stir in the turmeric and cook for another 30 seconds.
Add the liquids
Pour in the chicken broth.
Stir in the curry sauce and soy sauce.
Bring to a gentle simmer for about 10 minutes.
Cook the chicken
If using cooked chicken, add it during the last 5 minutes to warm through.
If using raw chicken, simmer it in the broth for 8–10 minutes until fully cooked.
Add vegetables
Stir in mushrooms, carrots, or other firm vegetables first.
Add spinach or bok choy during the final 2 minutes.
Cook the noodles
Cook ramen noodles separately according to package directions, then drain.
(Cooking them separately helps keep the broth clear and prevents the noodles from becoming overly starchy.)
Serve
Divide noodles into bowls.
Ladle the hot curry chicken broth and chicken over the noodles.
Top with green onions, soft-boiled eggs, chili oil, and a squeeze of lime if desired.
Flavor Tips
For a creamier broth, stir in ¼–½ cup coconut milk.
For extra richness, add 1 tablespoon butter just before serving.
If you like more spice, add red pepper flakes, cayenne, or chili crisp.
A teaspoon of honey or brown sugar can balance the curry if it tastes too sharp.
